While we were doing our YouTube Week we covered Christy's Throwback Kitchen, which is show where Christy Carlson Romano from Disney Channel invites other celebrities on her show and they make a recipe that relates to the thing they are famous for. We decided to try a Naco for ourselves and of course make Aaron Samuels' pretty popcorn from the Mean Girls Cookbook!
THE NACO
INGREDIENTS
TACO FILLING:
2 tbsp olive oil
½ yellow onion, diced
2 cloves garlic, minced
1 lb ground beef
1 packet taco seasoning
CHRISTY-MOLE:
4 Avocados
1 clove garlic, finely minced
½ bunch of cilantro, chopped
2 medium tomatoes, diced
½ yellow onion, diced
1 lime, juiced
Salt to taste
NACO BAR
2 tomatoes, diced
½ head of romaine lettuce, chopped
1 cup cilantro, chopped
1 cup sour cream
1 bag tortilla chips
1 package large flour tortillas
1 15 oz. jar queso
1 batch CHRISTY-mole
1 jar salsa
METHOD
FIRST MAKE YOUR TACO FILLING: Heat the olive oil in a large pan over medium high heat. Add the ground beef and break it up into small pieces. Cook until browned, about 5 minutes. Add the diced onion and garlic. Sauté until the onions are translucent, about 3 minutes. Add the taco seasoning and stir until all the ingredients are evenly coated. Remove from heat and set aside.
MAKE THE CHRISTY-MOLE: First, cut the avocados in half. After getting rid of the pit, use a butter knife to criss-cut each half. Use a spoon to scoop out the squares of avocado from their skins and drop them into a large mixing bowl. Add the tomatoes, cilantro, onion, garlic, and lime juice and stir to combine. Add salt to taste. Set aside.
ASSEMBLE THE NACO: Fill a medium size bowl with a single serving of tortilla chips. Add as much toppings as you want and give everything a light toss so that the chips are covered. Heat a tortilla in a non-stick skillet or over a burner on a gas stove until soft. Fill with your Naco creation and enjoy!
SO POPULAR POPCORN
INGREDIENTS
1 3.2 oz bag microwave popcorn
1 cup pink candy melts
⅓ cup melted coconut oil
1 ½ cups mini marshmallows
Pink sprinkles
Pinch of sea salt
METHOD
Pop popcorn per instructions.
Place candy melts in a microwave safe bowl. Microwave at 30 second intervals, stirring each time until completely melted. Add coconut oil and stir well.
Next, line a large baking sheet with foil and, using a metal spoon, drizzle a layer of melted pink candy over the foil. Lay down all the popped popcorn on top, pressing down so it sticks. Throw the marshmallows on top, mix well with your hands and drizzle the remaining melted pink candy mixture all over. Top with sprinkles ASAP to make sure they stick. Season with salt.
Let sit until completely cooled before eating.
